Light and savoury Caesar salad


Caesar salad is popular all over Europe for it is a light dish though it can make you full almost as if you have eaten juicy steak but not a salad!

Fresh vegs, chicken fillet slightly fried with olive oil taste so good with crunchy garlic flavoured toasts. To add some piquancy mustard based sauce is poured over the salad and toped with Parmesan cheese.

Ingredients:
salad leaves - 1 big bunch
chicken fillet - 300 g. (2 pieces)
loaf - 200 g. (half)
garlic clove
Parmesan cheese - 100 g.
olive oil
pepper
For sauce:
lemon juice - 3 table spoon
mustard - 2 tsp.
boiled egg yolk - 2
garlic clove
olive oil - 100 ml.
Cooking

Mix up 5 table spoon of olive oil and a clove squeezed through garlic press. Leave it for 15 minutes.


Cut loaf into cube-like pieces. Toast it on a medium heated pan using oil with garlic. Do not cover the pan!


Take two yolks out of hard boiled eggs and add 2 tsp. of mustard to them. Grind them together thoroughly.


Next, add 3 table spoons of lemon juice freshly squeezed out and and garlic clove using press. Mix it up.


Now we can add 100 ml of olive oil and stir it up with the rest of sauce easily. Do not add oil until previous steps fully completed otherwise it will be hard to get it mixed well.


Chicken fillet cut into pieces and
fry at an open medium heated pan with small amount of oil. Pieces could be either small or slim but long - it's up to you. You should bare in mind if you choose big pieces don't forget to use a knife while eating! ))

Chicken is ready when it becomes slightly brown. In the end of frying don't forget to add some salt and pepper.


Grate cheese.


Now we are going to bring all ingredients together. But I must notice that as you might remember this salad served individually. So take few plates and finish it !

First we need to tear some salad leaves and add a half of tomatoe cut into pieces.

Put some toasts and fried chicken. Then pour it with a mustard sauce. Finally, strew salad with Parmesan cheese and we are done !
You can serve 4-6 individual plates. As for me I like to cook big portions and to serve it as a main course for lunch or breakfast so I have only 4 portions. I know it is evening but I have already had my lunch with Caesar salad and happyt to share with you this experience! Enjoy !
