Creative pancake-like Pashtetki

Pashtetki are very similar to pancakes but stuffed with delicious filling of fried chicken and mushrooms.

This substantial dish could become easily a dessert if you make sweet filling and cover it with syrop.

Well, you are tied up only with boundaries of your fantasy!

Ingredients

For pastry:
sour milk - 0,5 l.
flour - 300 g.
cottage cheese - 200 g.
eggs - 2
household soda - 1 tsp.
sugar - 2 tsp.
salt - 0.5 tsp.
oil for frying
For filling:
chicken fillet - 300 g.
champignons - 100 g.
onion - 2
sour cream - 2 table spoon
oil - 2 table spoon
parsely
salt
pepper
Cooking

Whip cottage cheese with eggs. Add salt, sugar, half of flour and half of sour milk. Next, stir up everything well.

Add household soda to the remained sour milk and stir until it get slake. A sour milk will start foam up a little bit. Now add it to pastry, add flour and stir up using whisk to thorough mixture (small pieces of cottage cheese is ok).

Cut into small cube pieces 300 g. of chicken fillet. Chicken cut by hand will be much tastier for you can distinguish every juicy piece in your mouth.

Also cut finely onion and mushrooms.
Lay out it to pan, add two table spoon of oil and saute over medium heat to a turn.

The mixture will emit juice while saute process. It is ready when juice is almost evaporate - don't let get dry.

Add salt, pepper, sour cream and parsley when you finish frying.

For cooking pastry the best option would be a sides free pan as it is much easier to use a turner.

Oil well-heated pan surface and spread out a portion of pastry. The pastry must not be thick. Make it no more than 0,5 cm.

Put some filling on the frying pancake at one side but leave free space on its edge - approximately 2 cm.

Using turner try if a pancake fried enough from the bottom. And if it is toasty then carefully flip one side to another.

And finally we got a pasthetka :)
Press down the edges to stick them together. Turn it to other side after a minute. One more minute and remove it from heating.

Make happy your friends and family decorating the dish in someway. I like to cut it in two for the filling could be seen and then add some vivid accents as parsley, tomatoe pieces. And, voila! We got not just tasty but attractive and mouthwatering dish for your table. Enjoy you meal!
Yours, Pavlo :)
